Hi Ande! I do use avocado oil, ghee, grass fed butter, and coconut oil. Extra virgin olive oil is great for cooking up to 410°F (especially high quality, high polyphenol extra virgin olive oil), finishing dishes, cooking eggs and omelettes, dressing a salad, making vinaigrette, drizzling on hummus. Is the only oil, olive that you have? I think I saw butter, but not coconut for a hotter pan?
