The arrowroot starch helps make them a little fluffy, but you could also just omit them and add 1/4 cup more coconut flour, or a gluten free flour blend, or potato starch or flour if you have that. The taste will still be amazing, just texture a little different!

This looks so yummy. If I want to make with what I’ve got, do you have swaps for arrowroot starch? And can I just use almond flour and whole wheat? (don’t have coco flour)

Hi! I’ve never tried without arrowroot starch because the arrowroot makes the texture a little lighter and fluffier, but you can omit it and swap for another flour. It will still taste amazing just will end up with a slightly different texture. You can try almond flour + whole wheat instead just ensure the flour mixture come to 2 cups total. I’d recommend 1 1/2 cups almond flour and 1/2 cup whole wheat if you go that route! Let me know how it turns out!

You can make them without protein powder! Just add 1/4 cup more of the almond or coconut flour! I’ll add this to the notes, great question!

Hi Jen! I’ve honestly never made these without eggs, so I’m not sure they’d turn out without eggs. However you could try 5 tbsp flaxseed meal with 1 cup of warm water and let sit for 5 min and then add to the mixture. If you try this, let me know how it goes!
